What’s for dinner?
Occasionally, the meals aren’t planned out and I need to look for inspiration in my freezer/pantry/refrigerator. Today was one of those days. We’ve been eating a lot of red sauce recently – something I try not to do, but soccer season isn’t the easiest.
No soccer tonight, and inspiration struck! I had a pound of sausage in the freezer and a box of spinach in the refrigerator. The rest is from the pantry.
Spinach & Sausage over Polenta
Olive oil
1 lb sausage
1 box fresh spinach
2 rolls of premade polenta (or you could make your own)
1/2 onion sliced thin
1 can garbanzo beans (White Kidneys would have been better) Drained, rinsed
1 T fennel seed, chopped some
Red pepper flake to taste (you could use more, I used about 1 t)
1/4 t nutmeg, ground
Blue Cheese (Gorgonzola), crumbled
Heat oven to 350. Slice the polenta into rounds and put in the oven to cook.
Heat olive oil in a big skillet. Add sliced onions, cook until transluscent. Add sausage and brown. Add beans and cook all together. Add the fennel seed and red pepper flake.
Put blue cheese on the polenta rounds. Change the oven to broil and cook until melted and slightly browned (but not much! Be careful!)
In the last 5 minutes before eating, add the spinach to the skillet and wilt. Grind a little nutmeg over the top.
Serve the sausage & spinach mixture over slices of polenta.
