31 Days to Surviving Sports Seasons Sanely: Pork, Sauerkraut, and Potatoes

I love this meal and it is super easy.  



Drain and lightly rinse purchased sauerkraut.  I like to add caraway or fennel seeds, but only do so occasionally because my children like sauerkraut but don’t love the seeds.

If you don’t like sauerkraut, rinse well. Add some thinly sliced apples and the fennel seeds. Pour in a bottle of beer until thick and sweet and the beer has cooked off.



Anyway.


I like to buy those thin pork loin chops. Salt and Pepper them lightly and brown them quickly on a griddle or skillet. place atop the sauerkraut in the crockpot on warm. This also works on low with Bratwurst.



OR



Put a pork loin roast in the middle of the crockpot. Drain and lightly rinse sauerkraut. Pour over the roast. Add 1 C of apple cider. Cook on low all day.



Roast potatoes as you normally would in the over, about half the time ahead of the time you need to leave. Turn the oven off when you leave. The residual heat will be sufficient to finish roasting the potatoes and keep them warm for an hour or two.

If you want to take a little longer when you get home, sauteeing frozen pierogies are delicious.

Some pumpernickel or rye bread is fantastic with this meal, too.
